In 2020, White Buffalo Land Trust launched Figure Ate, the regenerative food brand.
At Figure Ate, each of our products begin by identifying an ecological need that can be addressed through regenerative agriculture, and become nutrient-dense, delicious foods that restore our bodies, our communities, and our ecosystem.

Figure Ate is working toward the redesign of our food system to directly address the climate, public health, and ecological challenges we face today. The verifications and certifications on our products provide true transparency back to regenerating land, and to the highest standards of kindness and care for the lives of farm animals.
100% of Figure Ate proceeds stay with White Buffalo Land Trust and our mission to practice, promote, and develop systems of regenerative agriculture for local, regional, and global impact.
Beef Biltong
Our Beef Biltong, a more tender and flavor-rich cousin to jerky, is the first regeneratively-sourced and Certified Humane biltong. Our beef is 100% grass fed and finished without antibiotics, added hormones, or GMO feed. Inspired by the traditional South African recipe, we marinate the beef in our persimmon vinegar and add organic spices before air-drying it without heat. The result is a beautifully sliced 5 oz steak, packed with 32 grams of protein, 0 grams of sugar, and no artificial preservatives. Our Original recipe features the earthy tones of coriander and black pepper and our Spiced recipe adds garlic and red pepper for a hint of heat.
Persimmon Vinegar
Our Persimmon Vinegar has a uniquely delicious taste, and is the perfect alternative to citrus and apple cider vinegar in your favorite recipes and health tonics. Our persimmon vinegar supports heart, liver, digestive, and skin health and provides antioxidants that aid in healthy aging. We chose persimmons for their unique health benefits and their resilient, drought tolerant nature, which makes them a climate appropriate crop for the California Central Coast region. Our persimmons are certified organic and grown by farmers dedicated to improving soil health.
Beef Biltong
